According to The University of Maine, green beans are high in vitamins A and C and can account for nearly 17 percent of a woman's daily vitamin A requirement and 27 percent of the required vitamin C. Wash fresh green beans with cool water. If you are using frozen green beans, thaw them first by placing them in a bowl covered with cool water. Canned green beans can do not need to be washed.
Cut green beans diagonally or cross-cut. If you are using fresh green beans, and like them to have a sweeter taste, cut them in small pieces. Beans that are older and more mature should be cut French style -- sliced lengthwise.
Add green beans to the Crock Pot. The amount of green beans used should be determined by the number of servings desired.
Season green beans to taste using black pepper, garlic powder, crushed red pepper and salt. You can also season using four slices of bacon that have been cut into smaller pieces.
Add water to the Crock Pot, covering the green beans completely. If you are using canned green beans, use the juice from the can instead of fresh water.
