Back in 2013, Beyonce kicked off a diet revolution when she majorly slimmed down with the help of a plant-based diet. Well, apparently Queen Bey is making another go at vegan eating: She recently announced she’s ditching animal products again in preparation for her headlining gig at the Coachella Music Festival.

On Friday, the “Lemonade” singer posted a photo of a healthy-looking avocado-toast concoction on Instagram. “44 days until Coachella!! Vegan Time!!” she captioned the food snap. And in the photo she tagged 22 Days Nutrition, the meal-delivery program she launched with her nutritionist and trainer Marco Borges — the man who convinced her to go vegan the first time around.
The 36-year-old, who pulled out of headlining the popular music festival in 2017 because she was pregnant with twins Rumi and Sir Carter, already appears to be in fantastic shape. She also posted a photo of herself and her dancers from rehearsal, showing off chiseled washboard abs in a crop top.
But weight loss isn’t the only motivation for the singer to return to a vegan diet. Back in 2015 she marveled about the benefits of a plant-based diet to the New York Times, telling them she saw “a noticeable glow to my skin without having to deprive myself of carbs. I even slept better.”
Borges, who penned a book about the Carters’ favorite diet, told People in 2015 that the couple “loved” going vegan. “They walked away with a greater understanding of the powerful benefits of plant-based nutrition. They were getting people saying, ‘Your skin has this glow.’ And who doesn’t like being told they look awesome?” (Kate Hudson also insists following a vegan diet is behind her perfect skin.)
What exactly does Beyonce’s vegan diet entail? She avoids all meat, dairy, eggs and other animal products, getting her nutrition from minimally processed and whole foods. Breakfast could include whole-grain bread with avocado and red pepper flakes or toast covered with almond butter and berries, homemade granola and green smoothies. Lunch and dinner consists of things like quinoa and beans, stewed lentils or a large green salad. Oh yeah, and no booze.
If you’re considering a plant-based diet, keep in mind that you can’t just cut meat and dairy out of your diet — you need to replace them with other foods or supplements that contain B-12, zinc and iron.
You also want to make sure you are eating a diet like Beyonce’s — high in fiber and low in fat and calories — if weight loss is your objective. And be careful of adding too many processed carbohydrates into your diet.
