When you slow cook chicken with tomatoes and onions, the chicken becomes tender and infused with the flavors of the other ingredients. A rustic chicken, tomato and onion stew is an ideal dish to make in the slow cooker, and makes a delicious and relatively simple one-pot meal. The stew can be served with fresh bread, over pasta noodles or with rice. You can slow cook your stew overnight, or if you have less time, cook the hearty chicken stew at a high temperature for two to three hours.

Heat the oil in a skillet over medium to high heat, add the chicken and brown each side for about three minutes.

Transfer the chicken pieces to your slow cooker.

Add the chopped onion and tomatoes to the chicken.

Sprinkle the chicken and vegetables with the oregano, thyme, salt, pepper and garlic and stir gently.

Stir in the tomato sauce, wine and chicken broth.

Cover your slow cooker, and cook on low for five to seven hours.
